Sometimes finding something good to eat on the Ketogenic diet is hard. I mean I can eat all the meat, cheese, eggs, and fat I want. But even that gets old at times. For breakfast every day I had been eating 2 eggs and 3 sausage links. It lasts a good amount of time and keeps me from being hungry. It served it's purpose well. But eventually you want something else.
I came across egg breakfast muffins on Pinterest and decided to give them a try. They looked easy enough, so I didn't even follow their recipe and created my own. I thought they were delicious and made breakfast prep a lot easier. I made a dozen and they last about a week in the fridge. I think they are perfect for anyone on the go, not just someone on the ketogenic diet. I just used sausage and cheese for mine, but you could add anything you like such as onions, mushrooms, peppers, or bacon. Each week you could mix it up some, so even though they are the same, they are somewhat different.
Easy Breakfast Muffins
- 10 large eggs
- 7 sausage links (I use Bob Evans as they are 0 carbs)
- 1/2 cup Shredded Colby Jack cheese (Kraft is 0 carbs)
Cook sausage links as directed and cut into small pieces. Evenly distribute in a greased muffin tin, or use silicone muffin containers for easier clean up. Add cheese to muffin tins.
Scramble the 10 eggs together, add salt and pepper to your liking. Then pour the egg mixture into the muffin pan.
I baked these on 350* for about 15 minutes. Give or take depending on your oven. These will be about 100 calories per muffin with 0 carbs. The calorie count will depend on what sausage and cheese you use.
Like I said these muffins are great for anyone to eat on the go. I store them in sandwich baggies by 2's and just pop them in the microwave for a minute to heat them up. J loved them and ate 2 for lunch the day I made them.
